What's your favourite spice?

I know I'm really setting myself up with this answer...but my favorite spice to use is Cumin...

I'm making a curry tonight, consisting of chicken, onions, peppers, tomatoes and lots and lots of chilli peppers.
I have a big bag of spices, containing pretty much anything, i want this curry to pretty much blow my head off (not literally, as some folk will no doubt be disappointed to hear). What spices would everyoner recommend? I was thinking of keeping it basic with tumeric, cumin, avis and curry powder?

Cinammon in gum, cookies, certain savory dishes(!) and cinammon schnapps. Oh yea!

Garam Masala and ground pepper. Not many people think to put pepper into a curry, but it really does add loads of spice.
I love pepper, me. I have it on everything.

Garam masala, perhaps? hough I think cumin and cardamom aree what makes it spicy. I'll have to ask the wife for a recommendation, if I remember.

No-one's ever got a bad word for pepper have they?
There's all sorts of nasty stuff said about salt and butter, but I've never heard anyone critisize good old pepper.

You know I think you are on to something there. I almost never put pepper in my curries, I think I will make a point of it in future. I make a fucking mean curry, every bit as good as the local curry houses.

Cinnamon is a vital part of why Vietnamese pho is sooooooo delicious, and Chinese red cooked meats and I always chuck a cinnamon or cassia curl into my saffron basmati rice.
What do you put caraway seeds on? I've only tried it with pork but will give it another go if you give me some ideas.

My only experience of caraway seeds is in the excellent seed cake my granny used to make with them. No idea what other purposes they serve....tho doubtles Aunty May will enlighten us.

oregano is probably my favourite though for cooking with, though I tend to use lots of different ones.

Still prefer it rather than chicken. Perhaps I should eat more pork, I hear it's good for hypotension.
Anyway, don't listen to me, chick. It's only a matter of personal taste really. I put caraway seeds in almost everything I cook cause I just luuuv them, e.g. my spaghetti sauce wouldn't be world famous if I didn't put some in it ha ha :hungry:
SMOKED PAPRIKA -is a goodun get it from ur local deli-'la chin ata'
hook a brother up with some deli goods,and you will set him up for some cool tasty dishes

There was a health branch or craze, or however, that ran through the 60s that categorically stated that Black Pepper was a strict no-no. Too heating for the Blood (Yang vs. Yin etc.s)through Digestion. also that it was too harsh for the whole digestive tract. Even Cancer causing because it can be called a burnt spice. Love it regardless.
Any spice first heated in the hot pan w/out destroying the oils. Brings out so much of the flavour. ex. when making any curries.
Favourite Spice. maybe Star anise. Similar to Aniseed but has a cleaner bite. Love basic herbs both fresh and dried. Bay leaves too.

I'd never heard about that, I have read that black pepper helps you to absorb vitamins though....

The Spice MELANGE.Gives you blue eyes and the ability to "FOLD" SPACE.Put that in your curry.

yes. it's written that it helps absorb some vitamins. also has some trace minerals itself. How useable are the amt.s though?! Is both a stimulant and a catalyst. Foods as medicines too. If there is an imbalance you'd probably want to correct that before tipping the scales the wrong way. Over production of cell divisions that sort. or kicking off an illness (mild pain to full blown ulcer..nice shh) also is harsh to some systems.
Good stuff though. yumm, makes a big difference to alot of foods. Bought a clear peppermill when travelling ages ago to have the fresh cracked pepper.
Wheaties (the cereal) now has a line of vitamins with black pepper extract. Very spicy for my taste. :dead:
