Inspired by a lot of people's love of Bacon and other pig meat in general, I decided to opt for pork for dinner and very nice it was too.

Pork Chops infused with Thyme jus served with Roasted Potatoes and Chestnut Mushrooms.

INGREDIENTS:

(to serve 2)

2 Large lean Pork Loin Chops Maris Piper Potatoes Chestnut Mushroom Fresh thyme (dried will do) Sea Salt and Ground Black Pepper Touch of Olive Oil REAL butter Garlic (as much as you like)

METHOD

Peel and cut potatoes into even sized pieces, bring to boil, simmer for up to 10 mins and drain. Meanwhile, heat a tablespoon of oil in a roasting tin.

AT the same time, dry fry the chops in a griddle pan with some salt, pepper, thyme and a 'touch' of olive oil and garlic to stop initial sticking. Turn once until sealed.

Give the potatoes a good toss in the pan and transfer to the roasting tin, the oven should be at least 200c. Transfer the chops to an ovenproof griddle pan and place at the bottom of the oven.

Once nearly cooked quarter the mushrooms and fry in a knob of butter with some garlic (if preferred) and plenty of salt and garlic if preferred.

Heat the plates and serving dishes..............and serve with some Cream & Black Peppercorn sauce.

Lovely.

COOKS TIPS

If you don't have a griddle pan : those of you in the North, a tin bath will be ideal. Those of you in the South, will no doubt know a man who can.

HEALTH WARNINGS

Whilst Pork is considered a 'white' meat and therefore is considered 'healthy', like most things, too much in excess is not good. Basically, it can 'bung' you up.

THRIFTY TIPS

If the above applies, and herbal and/or natural remedies, such as prune juice, don't hit the spot, then try mind over matter. All you have to do is sit on the big white telephone, and imagine you are talking to 'Alan' from Bristol. This has an immediate effect - you empty your bowels and he shuts his mouth!

Tonight I made a favourite - caramelised garlic

Put peeled garlic into a narrow pan and cover with olive oil. Place on a low heat and cook until it starts to turn golden brown. Take it off the heat and it will continue to cook until cool. Smear onto nice bread and doallsorts of stuff with it. Yum. From this book if interested Kath, a great thread idea :thumb:

Nothing nicer and quicker than warm fresh bread, garlic, olives, olive oil, wine (without saying), music, good company.........grrrrrrreat.:thumb:

Frankly, I am disappointed.

I was hoping for Jeff to come in here with his amazing '101 things to do with bacon'.

Kath, I don't think I will have time to take my coal out of the bath, can this recipe be adapted for hot coals a la un barbecue?

hopefully this will both heat the house and provide sustenance, I await your advice

I am a northerner and comply with smokeless fuels policy 164439 of the factories act. would the leftovers be beneficial to my whippets? and would their leftovers be okay for the bairns?

Ah good question!

Think of your bath full of coals as an Aga! Then you can go and buy posh cookery books that are full of absolute crap that no one ever wants to eat - but you are saving the planet - hence you will sleep well.

Leftovers are the best.

I was kinda taking the piss out of anyone who thinks anyone who lives in one part of the country is better than anyone else - don't even waste time to read the crap - get your tin bath on heat now! Ready for breakfast.:)

Mmmm.... bacon-wrapped bacon...

There is no end to the absolute greatness of bacon!!!

Bacon ice cream...hell, I can make a milkshake out of that!!!

Cambo...I noticed that the bacon in England seemed meatier than what is normally served here in the States...of course, I have learned that bacon in the UK is generally from the pig's back, whereas ours comes from the pork belly...

either way, I'd take bacon over a bowl of porridge any day!!!
