LE's own private Idaho sounds like an exciting confluence of neo-Egyptian architecture, Hooters bars that are a bit light on for hoot, Steve Guttenberg fans and of course, potatoes. Fields and fields of them. Russets, Pontiacs, Goldrush, Boise Benders, all styles, all the colours of the rainbow. Apparently they're lovingly known as 'taters by the potato-lovin' locals.

So here's a great opportunity to pose any potato questions you might have.

Potato years. Growing Season seed, to field harvest to market. Older pototoes get they moniker from being aged and cool stored don't they LE. Youngins' go straight from field, to sink to pan then table. no.

Next brings the question LE. For the new loose skinned ones. Acceptable to mix steamed or seared new potatoes if singed w/ panfried salted butter + garlic. Savoury, that sort. With cold sourcream, blushed tomato and spring onion. Or do you keep 'em seperate saved for two meals. Don't know how the belly might like the two styles mixed. Thanks.

Not a huge fan of the traditional baked spud, LE.

Of course that may be a hangin' offence in some parts, so if I was in Boise and your missus asked me how I'd like my baked 'tater, I'd smile graciously and request:

"A full-bodied Russet with a pre-softened, creamy infill jacketed by a basted skin crisped to a light rusty brown, then generously sliced and furnished with some authentic fiery Texas chilli, chunks of marinated Jalapeno, drizzled with melted Pecorino cheese beneath a small pillow of local organic sour cream and adorned with some finely-sliced scallions."
