Mike - The Perfect Bacon Butty Has Arrived!

Scientists have created a mathematical formula of how to make the perfect bacon butty. Experts at Leeds University discovered the secret to the ideal sandwich lay in how crispy and crunchy rashers were.

They found that two or three back bacon rashers should be cooked under a preheated oven grill for seven minutes at about 240C (475F).

The bacon should then be placed between two slices of farmhouse bread, 1cm to 2cm thick.

Cooking times

Four researchers at the Department of Food Science spent more than 1,000 hours testing 700 variations on the traditional bacon sandwich.

They tried different types and cuts of bacon, cooking techniques, types of oil and a range of cooking times at different temperatures.

A shortlist was then tested with computers to measure the texture of each sandwich.

Fifty volunteers also judged each sandwich according to its taste, texture and flavour.

'Turn-off'

Dr Graham Clayton, who led the research, said: "We often think it's the taste and smell of bacon that consumers find most attractive.

"But our research proves that texture and the crunching sound is just - if not more - important.

"While there was much debate within our taste panels on the smoked or unsmoked decision, everyone agreed that tough or chewy bacon is a turn-off."

I saw this in work and instantly exclaimed "must tell digital mike" much to the bemusement of my cow-orkers.

Tried posting it about 6 times, no dice.

Our proxy server in work is THE most random piece of software I ever encountered (not counting Yamaha keyboards of course).

I personally think their formula has the bacon:bread ratio wrong. I think "enough bacon" is like the last prime number.....there's probably no such thing, but if there is, it's fucking enormous. THEIR formula is for low quality salty bacon. The best ;ight;y smoked back bacon, well, it's 2 PACKETS per sarnie.

i like my bacon butty with almost raw rashers. cooked just enough to kill germs basically.

I don't *get* crispy bacon. It tastes like ash not like meat, and it pokes the roof of my mouth.

I realise that some people may see this as blasphemy but I cook bacon in a microwave. Put three or four rashers of back bacon on a large microwave bacon tray, cover them with kitchen paper or a plate cover and then cook them on full power for 2 mins 40 secs (for three) or 3 mins 40 secs (for four). It's quicker, there's less cleaning to do afterwards and I find the results are just as good. Indeed, using this method I just had a bacon sandwich which I'd say was perfect.

I'm surprised no-one's listed their top 5 places where they buy bacon/bacon sandwiches from. Have top 5/supermarket threads been banned?

Does anyone fry the bacon for butties, or just bake or microwave it? Fried bacon is yummy and the grease makes it so healthy..... :thumb:
