as nic says, they were french living in nova scotia (acadians--say it fast and you get 'cajuns') deported from canada by the british, once that province changed hands, to louisiana (which was then a french colony) several hundred years ago and they now make really spicy food.
and, no, there aren't any cajun communities in florida, particularly south florida! being cajun and being french are quite different as cajuns have been in america so long, and the cajun language is not french, but a french patois, like creole. and, as i said, their food is super spicy.
